Chicken Pastina Soup Ingredients * 2 cartons chicken broth * 1 rotisserie chicken, shredded * 1 onion, roughly chopped * ¾ bag baby carrots (or equivalent regular carrots) * 4–6 stalks celery, chopped * 5 cloves garlic * Olive oil * 1 tablespoon Better Than Bouillon chicken base * Salt * Black pepper * Garlic powder * Parsley * Pastina * Freshly grated Locatelli Pecorino Romano, for topping Directions In a large pot, add olive oil, onion, carrots, celery, garlic, Better Than Bouillon, salt, pepper, garlic powder, and parsley. Pour in 1 carton of chicken broth, cover, and let everything cook until the vegetables are very soft. Once the vegetables are soft, blend everything until smooth using an immersion blender or transfer to a regular blender. Add the second carton of chicken broth and stir to combine. Boil your pastina separately according to package directions. Add the shredded rotisserie chicken to the soup and let everything heat through. Serve over the cooked pastina and top with plenty of freshly grated Locatelli Pecorino Romano. #chickensoup #pastina #italianfood #comfortfood #soupseason
