A chicken salad for every season! 🍂 This one was just crazy. The textures. The flavors! Went a lil chunkier this time and was not disappointed. 10/10 🤌🏻 As usual I didn’t reeeeaaally measure anything… but here are some approximations. The great thing about this is that with the mayo and such, you can start smaller and keep adding more until it’s where you want it. 🙌🏻 I mean, you can really do that with everything. Either way… Fall Chicken Salad👇🏻 1 rotisserie chicken (white and dark meat, pulled/shredded) 3 large stalks of celery (minced) 1 honey crisp apple (or similar, small diced) 1/2 small red onion (minced) 1/2 cup chopped pepperoncini 1/2 cup fresh parsley (chopped) 1/2 cup fresh dill (chopped) 1/2 cup chopped toasted pecans 1/2 cup dried cranberries (unsweetened) 1 lemon (zest + juice) 2 tbsp ACV 1 cup mayo (your fav) 1 tbsp Dijon or whole grain mustard (or a combo!) 1/2 tsp celery seed Kosher salt + fresh cracked pepper to taste Serve with crunchy crackers and some sharp cheddar! YUM! I’m already looking forward to a winter chicken salad. What should I put in it?! 🤔🤔 #chickensalad #fallrecipes
Happy Anniversary to the love of my life 💛 I dug up my vows from 12 years ago and it all still rings true and reverberates through our children, this part especially: “As many of my family and friends here know, I’m a VERY sensitive person. I’ll read the news and have an extremely hard time recovering from it, and regaining faith in the world, faith in humanity. But now, I can just look at Jake and completely believe in the magic of life and in the good of the world. In Jake I see hope and love and through that it drives me to continue working towards my goals of making the world a better place everyday. ” I am so grateful for the universe showing me every day in my own home how miraculous life can be 💛
