Made Korean *non-spicy* chicken stew (dak bokkeumtang) for the whole family tonight - I think you + your kids will love this one too. 😉🍗 comment “RECIPE” to get this recipe sent to your DMs! KOREAN NON-SPICY CHICKEN STEW Serving size: 2 adults + 2 kids Ingredients: 2.5 - 3 lbs of chicken drumsticks 3 potatoes, halved 1 onion, halved 2 large carrots, cut into 1-2 inch pieces 3 scallions, cut into 1-2 inch pieces 3 tbsp of sugar 1 tsp of Gochujang (Korean red pepper paste) 1/2 tbsp of Doenjang (Korean soybean paste) 2 tbsp of mirin 6 tbsp of soy sauce 4 tbsp of oyster sauce 1 tbsp of minced garlic 1 tsp of grated ginger a pinch of ground black pepper 1/2 cup of water 1 tbsp of sesame oil 1 tsp of sesame seeds Directions: 1. Mix all sauce ingredients in the instant pot insert (soy sauce, Gochujang, Doenjang, mirin, oyster sauce, garlic, ginger, black pepper, and water.) 2. Add your chicken drumsticks and coat them evenly in the sauce. Let them sit and marinate while prepping your vegetables. 3. Add your vegetables and give them a quick toss in the sauce. Close the IP lid and pressure cook on HIGH for 20 minutes. 4. When done, manual / quick release. When the steam is done releasing, open and press the SAUTE button to thicken the sauce, about 10 minutes. 5. When the sauce is thickened, turn off the SAUTE mode. Top with scallions, sesame oil and sesame seeds and enjoy!

What should I plant in this subtropical climate? Leave your answer in the comments. And if my incompetence doesn’t scare you and you want to learn alongside me, follow @theembodiedecology to learn more about our upcoming agroforestry course in Feb where we will be actually planting said fruit trees. And stay tuned also for soon to be announced webinars with Andrew Cameron himself @andrew._.c. And to see the journey in action you can follow our forest / farm community page @beloved.forest.collective . Thanks Andrew for your patience and guidance. Sorry for all the bare soil I exposed during my landscaping mission and I’m looking forward to eating our cows, eggs and exotic native fruit with you when the world burns. 🐝🐔🌺
