After spending a couple of weeks in Maharajji’s presence, Jai Uttal arrived at the temple as usual, only to be stopped at the gate. The gatekeeper explained that Maharajji had left the previous night and that no one could enter the courtyard.

Jai asked where Maharajji had gone and when he would return, but the gatekeeper didn’t know.

In that moment, Jai realized something profound: “My beloved had left me.”

He hadn’t even realized that Maharajji had become his beloved until they were suddenly separated. His heart broke open. Sitting before Hanumanji’s murti, he began to sing, allowing the sadness, longing, and overwhelming love to pour through him.

Jai Uttal describes Maharajji as a manifestation of infinite divinity, appearing in human form. He doesn’t regard Maharajji as merely a symbol or memory. He describes Maharajji’s presence as real and continuing beyond his physical body.

As Jai beautifully shares, “But the presence itself is constant.”

For Jai, Maharajji was “this doorway into infinity.” A doorway into a love that could not be confined by walls or gates, by the physical body, or even by separation.

Ingredients
6 to 8 bell peppers
2 pounds ground chicken
2 packets fajita seasoning
1 white onion, diced
2 tablespoons olive oil, divided
Salt and pepper, to taste
1/4 cup water
1/2 cup dry basmati rice
1 can (15 ounces) black beans, rinsed and drained
1 jar (16 ounces) salsa
1 1/2 cups shredded Mexican cheese, divided
Optional toppings: avocado, cilantro, sour cream

Instructions
1. Preheat the oven to 375°F. Wash and dry the bell peppers, slice off the tops, and remove the seeds and ribs. Set the tops aside.

2. Place the peppers upright in an oven-safe dish or Dutch oven. Season with salt, pepper, and a drizzle of olive oil. Pour 1/4 cup water into the bottom of the dish and bake for 10 minutes. Pour out any liquid inside the peppers.

3. While the peppers bake, cook the basmati rice according to the package directions.

4. Dice the reserved pepper tops (discarding the stems) and the onion.

5. Heat 1 tablespoon olive oil in a large pan over medium heat. Add the ground chicken, diced peppers, onion, and fajita seasoning. Break the chicken apart and cook until browned and cooked through.

6. Stir in the black beans, cooked rice, 1 cup of the cheese, and the salsa until combined.

7. Fill each pepper with the mixture and bake for 20 to 25 minutes.

8. Top each pepper with the remaining 1/2 cup cheese and bake 5 more minutes, until melted.

9. Serve with sour cream, avocado, and cilantro
