AUTHENTIC MUTTON ROGANJOSH

The art of authentic Kashmiri Wazwan! ❤️ Mutton Rogan Josh, prepared the traditional Waza way.
NOTE: Two essential ingredients used in many Wazwan dishes are Mirchi ka Paani and Shallot Paste. These bring depth, colour, and flavour to traditional Kashmiri cuisine.

Ingredients:
- 2 kg mutton, medium-sized pieces
- 2 litres mutton stock (to be reduced during cooking)
- 1 cup chilli water (Mirchi ka Paani), approximately
- ½ cup shallot paste
- 6–8 green cardamom pods
- 4–5 cloves
- 2 tablespoons turmeric powder, approximately
- 1 cup ghee

Method:

1. Boil the mutton, remove the scum, and strain. Reserve the stock and wash the mutton thoroughly.
2. Add the mutton and stock to a large pot.
3. Add green cardamom, cloves, and turmeric. Boil until the raw smell of turmeric disappears.
4. Add the shallot paste, chilli water, and ghee.
5. Cover and cook until the mutton is completely tender and the stock reduces to a thick gravy.

Your traditional Kashmiri Wazwan-style Mutton Rogan Josh is ready!
