**Sabudana Popcorns for Navratri… crispy little bites with a paneer surprise! 😍🔥**

Bored of making the same old sabudana khichdi every Navratri? Try these crispy **Sabudana Popcorns** made with soaked sabudana, boiled potatoes and paneer! 🥔🧀

These golden, bite-sized fasting snacks are crunchy on the outside, soft inside and packed with chatpata flavour. Perfect for Navratri vrat snacks, evening cravings or whenever you want something different from your usual sabudana recipes!

*Save this easy Navratri snack recipe** and try it this festive season. Send it to someone who loves crispy snacks!

Ingredients
- 1 cup soaked sabudana (sago pearls)
- 1 large potato, boiled and mashed
- 1 cup chopped paneer
- Sendha namak (rock salt), to taste
- 1 tsp red chilli powder
- 1 tsp cumin seeds (jeera)
- 1 tsp coriander powder
- 2 tbsp chopped coriander leaves
- Oil for deep-frying

Method
1. Drain the soaked sabudana thoroughly.
2. In a bowl, combine sabudana, mashed boiled potato, chopped paneer, sendha namak, red chilli powder, cumin seeds, coriander powder and fresh coriander.
3. Mix everything well and shape into small, bite-sized balls.
4. Heat oil and test-fry one ball first. Once it holds its shape, fry the remaining balls in batches until golden and crispy.
5. Drain on a plate lined with kitchen paper and serve hot!

Tips for crispy Sabudana Popcorns
- Drain excess water from the sabudana before mixing.
- If the mixture feels too wet, add a little more mashed potato or a small amount of suitable fasting flour, if permitted.
- Fry over medium heat so the balls cook through without browning too quickly.
- Vrat rules vary by household, so check that all ingredients and seasonings fit your fasting practice.

**What would you pair these with — mint chutney or vrat wali green chutney? 👇**

Looking for a quick and delicious way to use up your fresh fall apples? This APPLE CINNAMON CHIA SEED TOPPING is so good! Adding chia seeds gives this cozy topping a nutritional boost of fiber and protein, making it as fueling as it is flavorful.
It is perfect for meal-prepping a jar ahead for the week. Scoop it over your morning yogurt, warm oatmeal, overnight oats, or crispy toast. I added some on top of my vanilla Greek yogurt with a handful of peanut butter protein granola, which tasted like apple pie for breakfast 🍎 🍎

3 heaping cups apples, peeled and diced
1/2 cup water
2 tbsp chia seeds
2 tbsp maple syrup (more or less based on sweetness of apples)
1 tsp cinnamon
1/2 tsp vanilla extract

Combine the diced apples and water in a saucepan over medium heat. Simmer for about 20 minutes until the apples are nice and soft.
Mash the fruit with a fork or potato masher to the desired consistency (Leave plenty of apple pieces intact if you prefer a chunkier texture).
Stir in the chia seeds, maple syrup, cinnamon, and vanilla extract until fully incorporated.
Remove the pan from the heat and let it cool for 10 minutes. Transfer the mixture to a 16-ounce mason jar, allow it to cool completely, then seal it and store it in the fridge.
Consume within two weeks, or freeze the extra for later.

I am 34 years old in this photograph. Standing alone on the summit of Nanga Parbat. No Sherpas. No companions. A solo ascent of an eight-thousander.

After Nanga Parbat in 1970, I had lost my toes to frostbite.I had not lost my dreams. I kept going.

Today I am 82.

My body is no longer the same. But my mind still works. Fortunately, my mental strength and clarity have stayed with me.

I have lost physical strength over the years. But I have gained much more.

The joy of living. The desire to write. And above all, curiosity. I still want to discover, to understand, to experience life.

Follow your dreams. That is what has always driven me.

now, at 82, something else has come along. Something that only age can give you:

Serenity.

New movie coming sooon😏
