2024 was pretty awesome and a great opportunity for a lot of new beginnings. I met many new (hopefully lifelong) friends, made core memories with my best friends, tried lots of new things (cause why not) and loved most of them, met the prettiest, most perfect boy ever, got accepted into college, and overall, had SO much fun. Thank you to everybody that I have in my life, you give it vibrancy and make it worth living every day :)❤️

Dinner on Easy Mode. Flavor on HIGH. 🍅🌿 No boiling. No chopping. Just one baking dish, a few simple ingredients, and creamy pesto gnocchi that tastes like you did way more. Burst tomatoes, flavorful pesto, and burrata make this easy dinner feel a little fancy! Ingredients: • 1 package shelf-stable gnocchi (about 16 oz) • 1 pint cherry tomatoes, whole (I love Flavor Bombs!) • 2 tbsp olive oil • Salt, pepper and garlic powder, to taste • A small pinch of Italian seasoning • 2 generous spoonfuls pesto, plus more for topping • 1 ball burrata • Fresh basil Instructions: 1. Preheat oven to 425°F. Add uncooked gnocchi and whole tomatoes to a baking dish. 2. Toss with olive oil, salt, pepper, garlic powder and a small pinch of Italian seasoning. 3. Bake uncovered for 30 minutes, until the tomatoes burst and the gnocchi is tender. 4. Stir in pesto, gently pressing the tomatoes to release their juices. Add more pesto to your liking. 5. Top with burrata, a little extra pesto and fresh basil. Break into that creamy center and enjoy!
