Monday Hustle 😉

I pretty much have Steak Night dialed in… I’ve got my techniques and flavor profiles well catalogued. But tonight, I added a new wrinkle… Shio Koji… Shio Koji is a Japanese product made from fermented rice. It’s more complicated than that, but if you’re interested, I encourage a deeper dive. It’s marketed as a meat tenderizer, an umami booster, and time warper of the aging process. I chose a Rib Eye for my maiden voyage. The marinade was a five-hour process, then a Sous Vide session for a couple more. Pre-grill, it was well dusted with my house Porcini Rub, and seared. On the plate, a lush Red Wine-Port-Demi Glacé Reduction was applied. Sides are Grilled Asparagus and a Sheet Pan Ensemble of Kabocha Squash, Fingerling Potatoes, Red Onion, and Red Bell Pepper. I’ll need to experiment more with the Shio Koji, but for a first try, the tenderization was a real thing. I really want to try it with tougher cuts like chuck roast. I think lean pork cuts would benefit as well. Have you ever tried it?
