Trivandrum Chicken

Recipe by @spicysamayals

Ingredients:
To a bowl add 500g bone in, skinless chicken thighs
2 tsp coriander powder
1 tsp chilli powder
½ tsp turmeric powder
1 tsp cumin powder
1 tsp black pepper powder
1 tsp garam masala
1 tsp chilli flakes
½ tsp salt
1 tsp ginger garlic paste
Juice of ½ a lemon (10ml)
Mix everything well and let it marinate for 15 minutes, or cook it right away.

Now, to a pan on medium heat, add 2 tbsp coconut oil.
Toss in the marinated chicken and fry for 10 minutes until it develops a nice char.
Remove the chicken and set it aside on a plate.

In the same pan, add 2 sliced shallots
1 sliced onion
1 tsp ginger garlic paste
15 curry leaves
½ tsp salt
Mix everything well and sauté until the onions caramelize nicely.

Now toss the chicken back in and give everything a good mix.

Cook for another 5 minutes, or until the chicken is fully cooked through.

And it’s ready to serve!
