Good morning, and happy Sunday to all!
We had a lovely day yesterday. I picked up Joao at Central Station, and we enjoyed a delicious chicken dish that I prepared on a bed of vegetables. It was absolutely delicious!
Afterwards, we went out to a big dance party, where I danced the night away. We finally got home around 4 a.m., and Sir Max was waiting for us by the door.
Today, we are having a relaxed morning. The weather is chilly and grey, so the chef will be making a chicken, mushroom, cheese, and onion omelette for brunch. Later, we are off to FOAM Photography Museum in Amsterdam.
Dinner has not been decided yet. Perhaps pasta, but the chef is still thinking about it.
Have a wonderful Sunday, everyone. Stay safe and healthy.
Sir Max sends his cuddles to all! #amsterdam #amsterdamlife #cat #autumn #mmaxi26

There’s something wonderfully improbable about falling in love with someone who lives on the other side of the ocean.

Of all the people in the world, all the places we could have been, and all the circumstances that had to align for our paths to cross, somehow, we found each other.

And a few weeks ago, the woman I fell in love with from thousands of miles away flew across an ocean to spend three weeks with me in Brooklyn.

I’ve been trying to find the words to describe what those weeks meant, but I think the most beautiful part was how wonderfully ordinary it all felt.

The laughter, the adventures, the ridiculous conversations, the quiet mornings. The way we could spend hours doing absolutely nothing and never want to be anywhere else. Discovering all the little things about someone that you can’t quite learn through a screen. Realizing that the person I’d fallen in love with from afar was somehow even more extraordinary up close.

For a long time, I thought healing meant becoming someone who couldn’t be hurt again. But I’m learning that maybe it means having the courage to remain open to something beautiful, even when you know how vulnerable love can make you.

And what a beautiful thing this has been.

There’s something extraordinary about two people living entirely different lives on opposite sides of the world finding each other and feeling so profoundly understood. About someone feeling so new and yet so wonderfully familiar. About love making thousands of miles feel impossibly far away and somehow irrelevant all at once.

I’ve spent years studying what makes people feel connected, valued, and worthy of love. Yet here I am, still marveling at the experience of being human. Of finding someone who sees you, chooses you, and makes ordinary moments feel extraordinary.

I don’t know what the future holds. But in a world of eight billion people, finding a love like this feels like a one-in-a-million kind of miracle.

And perhaps the most beautiful lesson life keeps teaching me is that there are still wonderful things waiting to surprise us.

Sometimes, they even fly across an ocean to find us ✈️

If you haven’t made this one yet, consider this your reminder to MAKE IT!!! The crispy, crunchy, salty & savory potato salad w/pickles & dill is one of the best you’ll ever have. We’ve shared it before, and we were craving it.

I’ve said it before, and I’m saying it again… remove the bone from a skin on chicken thigh, it makes a world of difference in how you enjoy the dish. I will never stop doing this now that I started. It is an absolute game changer and levels of the entire meal! Please try it !

Sometimes we make our own BBQ sauce, but when we don’t have enough time, your favorite will do definitely work. I like a sweeter barbecue sauce for this since there’s so much savory in the potato salad. There is no question that this will knock it out of the park for you ! Let us know what you think!!

BBQ Chicken & Crispy Smashed Potatoes w/Dill Pickles

2 lbs mini baby potatoes, scrubbed
3 scallions, diced
Olive oil + salt

Place whole mini potatoes on a sheet pan. Drizzle generously with olive oil + salt and toss to coat. Roast at 425°F for 30 mins until fork tender.

Remove from oven and smash each potato with the bottom of a glass. Drizzle with more olive oil so all the edges get crispy. Return to oven for about 20 mins, flip, and continue roasting until deeply golden and crispy on both sides.

Dressing:
¾ cup Greek yogurt
½ cup kewpie mayo
2 tsp Dijon
Juice ½ lemon
2 tsp red wine vinegar
1 garlic clove, minced

Toss warm crispy potatoes with dressing, ¼ cup fresh dill, 2 tbsp chives, 6 minced pickles, 1 finely chopped shallot, salt + pepper. #bbq #chickensalad #pickles #crispypotatoes #smashedpotatoes

I’m gonna start this off by saying WHAT THE HECKKK!!!! I don’t even know where to begin. These last 6 months have been the most challenging, transformative months of my life and I would do it all over again if I could.

Going into this experience was beyond terrifying. There were so many moments I swore I wasn’t built for it. But I WAS! I faced my biggest fears, confronted life long obstacles, and discovered the strongest and most powerful version of myself.

John and Bree, you saw something in me I had never seen in myself. You pushed me to be a better version of myself every single day, even when I didn’t want to push myself. You are two of the most incredible people I’ve ever met and I’m so blessed to get to call you family. Tré, I am beyond lucky to call you mine forever. You kept me grounded, safe, and strong when no one else could. I couldn’t have asked for a better husband. Finally, thank you Jimmy and everyone I met along the way. I’m forever grateful and forever changed. 🩷🤸🏽✨💪🏼 @mrbeast
