KOREAN NON-SPICY CHICKEN STEW Serving size: 2 adults + 2 kids Ingredients: 2.5 - 3 lbs of chicken drumsticks 3 potatoes, halved 1 onion, halved 2 large carrots, cut into 1-2 inch pieces 3 scallions, cut into 1-2 inch pieces 3 tbsp of sugar 1 tsp of Gochujang (Korean red pepper paste) 1/2 tbsp of Doenjang (Korean soybean paste) 2 tbsp of mirin 6 tbsp of soy sauce 4 tbsp of oyster sauce 1 tbsp of minced garlic 1 tsp of grated ginger a pinch of ground black pepper 1/2 cup of water 1 tbsp of sesame oil 1 tsp of sesame seeds Directions: 1. Mix all sauce ingredients in the instant pot insert (soy sauce, Gochujang, Doenjang, mirin, oyster sauce, garlic, ginger, black pepper, and water.) 2. Add your chicken drumsticks and coat them evenly in the sauce. Let them sit and marinate while prepping your vegetables. 3. Add your vegetables and give them a quick toss in the sauce. Close the IP lid and pressure cook on HIGH for 20 minutes. 4. When done, manual / quick release. When the steam is done releasing, open and press the SAUTE button to thicken the sauce, about 10 minutes. 5. When the sauce is thickened, turn off the SAUTE mode. Top with scallions, sesame oil and sesame seeds and enjoy!
