We’re kicking off my new series with this cheesy chicken fajita pasta bake! 🌮🧀 Everything goes into ONE dish, there’s hardly any prep work, and the oven does the rest!
🌮 CHEESY CHICKEN FAJITA PASTA BAKE
Ingredients:
•12 oz uncooked penne pasta
•2 cups chicken broth (adjust as needed)
•1 packet fajita seasoning
•12 oz frozen sliced peppers and onions
•2 cups cooked shredded chicken (rotisserie works great!)
•1½ cups queso blanco dip
Directions:
1.Preheat your oven to 400°F.
2.Add the uncooked penne, chicken broth, fajita seasoning, frozen peppers and onions, and shredded chicken to a 9x13 baking dish.
3.Stir everything together. You may need to adjust the amount of broth depending on your baking dish. You want the noodles just covered with liquid, but not drowning!
4.Cover tightly with foil and bake for 35–40 minutes, or until the pasta is tender.
5.Remove the foil, stir, and pour the queso blanco evenly over the top.
6.Return to the oven uncovered for another 5–10 minutes, until the queso is hot and melty!
One dish, five minutes of prep, and the easiest cheesy dinner for a busy fall night! 🍁
Who’s excited for more 5-minute fall dinners?! 🤎

I think one of the hardest things about love is accepting that something can be beautiful and still not be meant to last.

I will never regret the happiness we found in each other, nor will I pretend that letting go doesn’t hurt.

Maybe someday, we’ll find our way to a happiness that no longer asks us to hold on to what we can’t keep.

Until then, I’ll be learning how to make peace with a goodbye my heart isn’t ready for. 🤍
