Truly an honor to receive the New York Emmy for Best Anchor… especially on a night when we celebrated my friend and mentor @billritter7. Bill was given the Governor’s Award tonight honoring his decades of service in journalism at @abcnews and @abc7ny. Bill is and will forever be our North Star. Congratulations to all the honorees. It’s a privilege to be part of this amazing Eyewitness News team.

Making my wife celebrate Children’s Day with me! In Brazil, children have a day just for themselves every 12th of October, filled with activities, gifts and the best part: lots of treats! To celebrate, today we’re making the best crunchy caramelised popcorn, and the secret is… Kerrygold, of course! Kerrygold is always our go to in the kitchen for any recipes sweet and savoury! Start by melting your @kerrygoldirl butter in a pan on medium heat, then add the brown sugar and golden syrup. Stir until everything is combined, then leave it to bubble away for 4 minutes. And this is important: don’t touch it anymore! Take it off the heat, add the bicarbonate of soda and stir quickly. Watch it foam up! It will nearly double in volume. This should only take a couple seconds. Pour the mixture over your popcorn and mix with the help of two spatulas to cover all kernels. Spread it out on two baking trays and pop it in the oven for 45 minutes, stirring every 10 minutes to get that perfect, crunchy coating. Let it cool (preferable a couple hours to allow to fully harden). Try not to eat it all at once, and aproveite! Perfect little Halloween treat too, good memories! Ingredients: Popcorn! Microwavable, popped or made on the hob like we show below. Butter caramel: 100g Kerrygold butter 200g brown sugar (1 cup) 170g golden syrup (1/2 cup) 1/2 tsp baking soda If making your own popcorn, add 60ml of vegetable oil (1/4 cup) to a pot with 3 kernels and wait until all 3 pop. Add 1/3 cup popping corn and take off the heat for 20-30 seconds to make sure all kernels come to the same temperature, now pop back in the heat, pop the lid off (leave a little steam gap) and wait for the popping to begin. You’ll know it’s all popped when you can count 3 seconds between each pop. You can use ¾ cup popcorn kernels if you don’t want the popcorn fully caramel coated and you prefer it less sweet.
