ONE POT CREAMY PUMPKIN SAUSAGE PASTA (gf, df)✨Nobody would know this creamy, decadent pasta is gluten free and dairy free. It’s everything I want in a hearty but healthy fall dinner — veggies, healthy fats, and lots of protein in a creamy, dairy-free sauce. You’ll want to make this again and again! Feel free to sub another type of sausage or just use ground chicken or pork. Ingredients: 1 lb sweet Italian chicken sausage 2 tablespoons avocado oil 1 small onion, diced 2 large carrots, diced 2 ribs of celery, diced 4 cloves garlic, minced 1/2 cup sun-dried tomatoes, chopped 1 tbsp nutritional yeast 1 tsp salt 1/2 tsp pepper 1 teaspoon Italian seasoning 3/4 cup pumpkin puree 3 cups chicken bone broth 1 (13.5oz) can coconut milk 8oz gf pasts (shells, elbows, etc.) large handful of spinach, chopped Instructions: In a large skillet, heat 2 tablespoons of avocado oil over medium heat until shimmering. Add the sausage and cook for 3-5 minutes, breaking it up into small chunks as you go, until evenly browned with no visible pink. Add the onion, carrots, and celery and cook for 4-5 minutes until softened. Add the garlic, sun-dried tomatoes, Italian seasoning, nutritional yeast, pumpkin puree, salt and pepper and cook for another minute. Stir in the broth and coconut milk and bring to a boil. Add the pasta, stirring to incorporate. Reduce heat to low and simmer for 15 minutes, stirring occasionally. Stir in the chopped spinach and remove from heat. Serve and enjoy!
Haitians Honor Their Ancestors Through Fèt Gede, a Two-Day Celebration of Life, Death, and Tradition Every year on November 1 and 2, Haitians in Haiti and across the diaspora observe Fèt Gede, one of the most meaningful celebrations in Haitian Vodou. It is a time to honor loved ones who have passed away, remember our ancestors, and celebrate the connection between the living and the dead. During Fèt Gede, Vodou practitioners gather at cemeteries to pray, light candles, make offerings, and pay their respects. Some wear black, purple, and white, while others celebrate through music, dancing, and traditional ceremonies. At the heart of the celebration are the Gede spirits, who are associated with death, ancestors, and the cycle of life. Baron Samedi and Manman Brigitte are among the best-known spirits connected to these traditions. While Fèt Gede takes place around the same time as All Saints’ Day and All Souls’ Day, it has its own deep roots in Haitian history, spirituality, and culture.
