Palak Patra Bites These bite-sized patras are a quick and delicious twist on the traditional recipe. They’re perfect for breakfast, tea-time, or packing into a lunchbox. Ingredients * Besan – 1 cup * Red chilli powder – 1 tsp * Turmeric powder – ½ tsp * Coriander powder – 1 tsp * Jeera powder – 1 tsp * Garam masala – ½ tsp * Asafoetida – ½ tsp * Jeera – 1 tsp * Sesame seeds – 4 tbsp * Ginger-green chilli paste – 1 tbsp * Jaggery powder – 1 tbsp * Tamarind pulp – 2 tbsp * Oil – 1½ tbsp * Water – ¼–½ cup * Salt – to taste * Baking soda – ¼ tsp * Spinach – 2 cups, finely chopped For the Tempering * Oil – 1 tbsp * Mustard seeds – 1 tsp * Sesame seeds – 1 tsp * Curry leaves – 8–10 * Fresh grated coconut – for garnish Method 1. In a bowl, combine all the ingredients except the baking soda and mix into a thick, smooth batter. 2. Just before steaming, add the baking soda and gently fold it into the batter. 3. Pour the batter into a greased steaming tray or plate and steam for 10-12 minutes until firm and cooked through. 4. Allow it to cool completely, then cut into bite-sized pieces. 5. Heat oil in a pan and prepare the tempering. 6. Add the patra bites and toss gently until lightly crisp. 7. Garnish with fresh grated coconut and serve warm. Tips • Add the baking soda only just before steaming for the softest texture. • Let the patra cool completely before cutting to get neat, clean bites. • Toss the bites gently while tempering to prevent them from breaking. No big freighter has gone down in open water on the Great Lakes since the Edmund Fitzgerald in 1975. Almost every accident on this route since then has happened in a river, a canal or a lock. This is the whole trip an ocean ship makes out of Duluth with a load of wheat: about 2,200 miles, 16 locks, and 600 feet downhill to the Atlantic at Cabot Strait. At 13 knots with no delays it takes about a week. The narrow places are the story. Ships built for this route are 78 feet wide and the locks are 80. The channel through the Thousand Islands squeezes to 450 feet, and two ocean ships lost their steering there a year apart, in 2014 and 2015. The seven locks above Montreal close in early January. In January 2026, eleven ocean ships were still above Montreal when the deadline passed. The deadliest spot on the route is not on a lake at all. It is in the St. Lawrence near Rimouski, where the Empress of Ireland sank in fog in 1914 with 1,012 people. Modeled in Blender. Ship track from the Army Corps waterway network. Numbers from NOAA's Coast Pilot 6, the St. Lawrence Seaway, the National Weather Service and the Transportation Safety Board of Canada.
