French Onion Chicken and Mushroom Pasta will be your new comfort food 🤍 Cook 8 oz pasta per package directions and set aside. Save 1 C of pasta water. Season 5 chicken thighs generously with salt and pepper. Heat 1 T EVO in a large oven safe skillet and sear for about 5 minutes per side. Remove and set aside. Add 3 T butter and 1 large sliced yellow onion to the same pan. Cook over medium heat for about 20 minutes, stirring occasionally, until deeply golden and caramelized. Add sliced mushrooms and also cook until golden. Add 3 minced garlic, 2 tsp fresh time, and chopped fresh sage to taste. Cook for about a minute. Sprinkle about a tablespoon of flour over the mixture and stir. Slowly pour in 1.5 C beef broth, a generous splash of cooking sherry, and 1 tsp Dijon mustard. Simmer until the sauce begins to thicken, 3 minutes or so. I also added a very small splash of gravy master to get that deep color that I love. Cut up the chicken thighs into bite sized pieces and nestled them back into the sauce. Cook for another 10 minutes or so - the chicken needs to reach 165 degrees F. Mix in 3/4 C shredded Gruyère cheese until melted. Add pasta water if desired. At this point you can put a little more cheese on top and broil til the cheese is bubbly and golden and serve over the pasta, or skip this step and just serve over the pasta. Obviously I skipped the broiled cheese this time. It’s delicious either way! Sprinkle with freshly chopped parsley, rosemary and thyme. Let me know if you try it! . . . #dinner #recipe #comfortfood #pasta #autumn
