Save a little room on your Thanksgiving plate for the carrots 🥕 @lmsthompson’s Boursin Baked Carrots pair the sweetness of carrots with rich, herby cheese for a bite you’ll keep coming back to.

Comment ‘RECIPE’ to have the details sent to your DMs.

INGREDIENTS:
1 pound carrots, trimmed
3 tablespoons olive oil, divided
2 garlic cloves, peeled and finely chopped
1 tablespoon chopped fresh rosemary
Kosher salt, to taste
Black pepper, to taste
1 (5.2-ounce) package Boursin cheese, any variety
1 1/2 tablespoons hot honey or regular honey

RECIPE:
1. Preheat oven to 400ºF.
2. Cut the carrots in half lengthwise, then again crosswise into roughly 3-inch pieces.
3. Drizzle the carrots in a bowl with 1 tablespoon of the olive oil. Add the chopped garlic, the chopped rosemary, kosher salt, and black pepper and toss until well combined.
4. Add the Boursin cheese and remaining 2 tablespoons olive oil to a baking dish and mash with the back of a spoon until well combined. Spread into an even layer. Arrange the carrots in a single layer overtop (you may need to turn the carrots on their sides to fit them all in). Drizzle with honey.
5. Wipe the edges of the baking dish with a damp towel to keep the edges clean.
6. Bake for 25 minutes.
7. Serve immediately or reheat before serving and enjoy.

I would peel oranges for you. I would warm your hands inside my pockets. I would learn how you like your tea and when you need one. I would save you the seat next to me every time. I would get out of bed to turn off the light you forgot. I would come outside to help carry your bags. I would leave the best bite on your plate. Let me love you like that.

Btw, poetry book ‘Between Heaven & Earth’ is out now. It’s a collection of poems about love, heartbreak, loneliness, inner struggles, healing, and the quiet journey of understanding yourself and life along the way.

If you’d like to read it, comment “Book” and I’ll send you the link.
