Recipe in the caption for my HIGH FIBER BROWNIES (GF, DF, RSF) for this week’s episode of Sweet-ish Treats! Every week I make a “sweet-ish” treat — something that satisfies a sweet tooth and is made with wholesome, nutritious ingredients, that are doing more than just curbing a desire for sweetness because! Today’s sweetish treat is fudgy brownies that get their fiber boost from black beans and ground flax seed. They are also loaded with antioxidants from raw cacao powder. This is a sweet treat that loves you back! Ingredients: 1 can (15 oz) black beans, drained and rinsed very well 8 large medjool dates, soaked in hot water for 10 min ½ cup maple syrup ¼ cup almond butter 1 tsp vanilla extract 2 eggs, room temperature ½ cup gf oat flour ½ cup cacao powder 2 tbsp ground flax ½ tsp baking powder ¼ tsp salt ½ cup dairy-free chocolate chips for the top Instructions: Preheat oven to 350°F. Line an 8x8-inch pan with parchment. Add the black beans, soaked dares, almond butter, maple syrup, and vanilla to a food processor and process until smooth. Add the eggs to a medium mixing bowl and whisk. Stir in the black bean mixture. To the same bowl, add the oat flour, cacao, flaxseed meal, baking powder, and salt. Stir until fully combined. Pour into the pan and top with chocolate chips. Bake 17-19 minutes, until the center is set and doesn’t jiggle. A toothpick should come out with moist crumbs, not wet batter. Cool completely in the pan before slicing. Enjoy!
