Bread making is a tactile delight, a learning curve directed by your senses and a mindful process. Many gluten free breads rely on more of a batter than a dough, and whilst these can still make good breads, I feel they miss a step along the way. Whether it’s mixing, dividing, shaping and scoring all by hand or just using your fingers to dimple a focaccia, the artisan intervention is what makes each loaf and roll unique.
