HIGH PROTEIN RAJAS CON QUESO 🌶️🧀 (RECIPE BELOW!!)

Have you tried rajas con queso with shredded chicken?! 😍🔥

This is a protein-packed twist on a classic Mexican favorite that’s perfect for an easy, satisfying meal. 🤤

High Protein + Low Carb | Serves 4

Ingredients

For the Rajas:

* 4 large poblano peppers
* 2 cups cooked shredded chicken
* ½ white onion, diced
* ½ cup queso fresco, diced or crumbled

For the Roasted Salsa:

* 3 Roma tomatoes
* ¼ white onion
* 1–2 jalapeños
* 3 garlic cloves
* 1 tsp chicken bouillon
* Salt and black pepper, to taste
* ¼–½ cup water, as needed for blending

Directions

1️⃣ Roast the poblanos: Roast the poblano peppers until the skins are charred on all sides. Transfer them to a plastic bag, seal, and let them sweat for 10–15 minutes.

2️⃣ Prep the peppers: Carefully peel off the charred skin, remove the stems and seeds, and slice the poblanos into strips.

3️⃣ Make the salsa: Roast the tomatoes, onion, jalapeños, and garlic until softened and lightly charred. Transfer to a blender with the chicken bouillon, salt, pepper, and a splash of water. Blend until smooth.

4️⃣ Sauté everything: Add the diced onion to a pan and sauté until softened. Add the poblano strips and shredded chicken, then pour in the roasted salsa.

5️⃣ Let it simmer: Stir everything together and simmer for 5–10 minutes so all those flavors come together.

6️⃣ Add the queso: Gently fold in the diced queso fresco or sprinkle it on top. Serve warm and enjoy! 🌶️🧀

Would you eat these rajas con queso with extra queso fresco on top or keep it simple?! 👀👇
