MISO GLAZE CABBAGE FLOWERS WITH MISO TAHINI & CASHEW FURIKAKE 🥬

Cookware @ruffoniofficial ❤️

INGREDIENTS:
2 cabbages
1 tsp kosher salt
Water, for cooking
Olive oil, for drizzling
Crushed dried Aleppo pepper, to taste

MISO GLAZE:
200 g white miso
110 g honey
50 g light brown sugar
80 ml soy sauce
55 ml rice vinegar
40 ml toasted sesame oil
40 g extra virgin olive oil @californiaoliveranch
40 g warm water

MISO TAHINI:
½ cup raw tahini
Juice of 1 lemon
4 tbsp prepared miso glaze
¼ cup iced water

CASHEW FURIKAKE:
1 cup cashews
½ cup toasted sesame seeds
Roasted nori sheets, 1 package (9 sheets)
Flaky salt @maldonsalt

METHOD:

Fill a wide, deep pan three quarters full with water. Add salt and boil. Lower heat fully, add cabbages, cover and cook for 15 to 20 minutes until slightly tender but firm.

Drain on a cooling rack, turning upside down to release trapped water. Once cool enough to handle, turn cut side up and gently open the leaves into flowers.

Heat oven to 450°F/230°C. Whisk glaze ingredients until smooth. Reserve 4 tbsp for tahini and some for brushing after roasting.

Place cabbages cut side up in a baking dish. Brush glaze over and between the leaves. Bake for 25 minutes, then broil until deeply caramelized, up to 10 minutes. Check frequently to prevent burning.

Whisk tahini, lemon juice, reserved glaze and iced water until smooth. Transfer to a squeeze bottle.

Pulse cashews until finely chopped but textured. Tear in nori and pulse into small flakes, not powder or paste. Transfer to a bowl, stir in sesame seeds and season with flaky salt.

While cabbages are still hot, lightly brush with remaining glaze. Drizzle generously with miso tahini, then olive oil. Add Aleppo pepper to taste and finish generously with furikake.

Serve and enjoy ☺️

Here’s your first official look at the all-new Kawasaki Z300, ahead of its launch on October 20.

It’s based on the Ninja 300 platform and will share the 296cc, twin-cylinder, liquid-cooled engine with 39hp and 26.1Nm. However, Kawasaki could make changes to the power and torque delivery as the intended purposes are different for the two motorcycles. Based on these images, the new entry-level sport-naked looks similar to the latest Z900, and its instrument cluster appears to be similar to the one on the Ninja 500.
