I'm excited to present my submission for the Condesa gin Bloom & Decay Ritual Series competition!
I was inspired by the original Little Green Man: the trickster-shapeshifter god Pan, and his prevalence in stories of high strangeness. Pan is associated with springtime and fertility, overseeing the first blooms of the warm season. NOX refers to the Night of Pan, a mystical state of ego-death on the path to spiritual enlightenment and rebirth.
I combined elements one would find on an altar to Pan, like sage, honey, and fruit (I used honeydew), and combined them with one of my favorite Mexican ingredients, tomatillos. I wanted a good amount of smoke in the cocktail, as burning sage and candles are also commonplace on an altar. I infused a bit of Condesa with the notoriously smoky Lapsang Suchong tea and used that infusion to fortify the tomatillo cordial. The recipe is as follows:

1.5 oz Condesa gin
1.0 oz acidified honeydew
0.75 oz Lapsang tomatillo cordial
2 sage leaves
Shake, double strain
Garnish: pickled honeydew rind and sage

Acidified Honeydew
x honeydew juice
3% ascorbic acid

Lapsang Tomatillo cordial
x tomatillos
25% Lapsang Condesa*
Blend ingredients together, add PectinX, strain thru filter cone until clear. Add 20% honey by weight of clarified juice and stir to combine.

Lapsang Condesa
x Condesa gin
10% Lapsang Suchong tea
Sous vide at 150F for 10 mins and strain.
