15-minute Black Bean Noodles! One more plant-based high-protein meal to add into your weekly rotation. Save the below ⬇️

We make this at least once a week, it’s such a wholesome meal, packed full of fibre and plant protein (28g protein, 17g fibre per portion)

Ingredients (this recipe is also available on my web app with 200+ more, check it out at the link in bio or find out more on the second pinned post at the top of my page!) 🥰

1 x 400g tin organic black beans
1/2 tbsp white miso paste
4 spring onions, white and green parts finely chopped
3 cloves garlic, minced
1/2 a fresh red chilli, deseeded and finely chopped
1 thumb sized piece of ginger, grated or minced
1.5 tbsp soy sauce or tamari
Juice of one large lime
250g dried noodles (I used spelt ramen)

To serve:
Drizzle of runny tahini
Green parts of the spring onion
Sliced cucumber
Roasted peanuts
Chilli oil or Shichimi

Method:

In a small bullet blender, add the black beans, juices and all, and the miso (if you’re using jarred beans or beans that have already been salted - only use 1 tsp of miso) Pulse a few times to break down the beans and combine the miso, you DO NOT want a smooth paste, you’re looking for something chunky! Set aside.

Cook the noodles according to the packet instructions. Once cooked, drain, rinse, and set aside. Drizzle over a little sesame or olive oil, to stop them from sticking or clumping together.

In a small saucepan, heat a dash of sesame / any neutral or olive oil on a low-medium heat. Once shimmering, add the white parts of the spring onion and a small pinch of sea salt. Cook off for 3-4 minutes, stirring regularly. Add the garlic and chilli, fry for 2 further minutes, then add the ginger. Fry for 1-2 minutes more, then pour over the soy sauce / tamari and mix well. Add the blended miso black beans, stir everything together, then turn off the heat, squeeze over the juice of one lime, add the noodles and combine with tongs.

Serve into bowls with a generous drizzle of runny tahini on top, green parts of the spring onion, roasted peanuts, sliced cucumber and chilli oil / Shichimi.
