St Kilda's @stokehouserestaurant channelled Samoa for this year's @melbfoodandwine festival, with @jasoncstaudt and the team hosting chef @henryonesemo from 20-seat @tala_nzl in Auckland.
It was seriously amazing. Warm, gentle vibes. A golden hour for the ages. Food anchored in place and story that was genuinely surprising.
Highlights included whitebait and caviar on taro bread.
A black carrot tuile hiding silverside tartare a la spam.
A smoking coconut that concealed ice cream.
Tableside handwashing to symbolise honour and respect.
Generous, delicious, meaningful.
A dinner that will live in my heart and soul.
