โœจDay in the Life of a Private Chef โœจ The most incredible roast chicken with a creamy white winey, dijony herby sauce ๐Ÿค๐Ÿ— If youโ€™re looking for a roast chicken that feels a little bit fancy but is shockingly easy to make, this is the one. Golden, crispy chicken with the most delicious sauce โ€” perfect for a Sunday roast (or any time?!) and itโ€™s impressive AF. INGREDIENTS * 1 whole chicken, spatchcocked/butterflied (you can do this yourself by cutting out the spine and breaking the breast bones ๐Ÿซ ) * Salt * 1 onion, roughly chopped * 2/3 garlic cloves, smashed * White part of a leek, washed and rough chopped * 150/250ml dry white wine * 250ml thickened cream * 1โ€“2 tbsp Dijon mustard * 15g fresh flat-leaf parsley, chopped * 5g fresh thyme leaves * Olive oil METHOD 1. Preheat your oven to 200ยฐC. I spatchcocked (AKA BUTTERFLIED - my chicken, which is cutting the spine out, flip it over and push down on breastbone.) you can do it yourself or ask the butcher or try buy it already done. 2. Pat the chicken dry on both sides, season generously with salt. I left my chicken out of the fridge while I prepped my veggies. 3. Rough chop onion, leek and garlic and place in your chosen roasting vessel. Place the chicken on top of the veg and pour about 1 cup of white wine in the pan. 4. Roast the chicken at 200 for 40 mins. 5. While chicken is roasting, combine cream, mustard and herbs. Mix. 6. After 40 mins, turn oven down to 140 degrees, pour the cream sauce over the chicken. Cook for another 40 - 50 mins depending on your chicky size, or until the internal temp is at 75-80 degrees. 7. Basted with the cream + pan juices every 10-15 mins or whenever you remember ๐Ÿ˜… 8. Remove the chicken from oven and rest for 15โ€“20 minutes. 9. Carve the chicken, add back to the sauce and serve immediately. I served mine with mashed potatoes and my favourite greens ๐Ÿ’š Save this one for your next Sunday roast! #RoastChicken #SundayRoast #EasyDinnerIdeas #HomeCooking
