CHEESY POTATO EGG BITES #PeteAndGerrysPartner — this one’s an easy-to-make breakfast to feed a hungry crowd. @peteandgerrys organic pasture-raised eggs are laid by hens who roam on wide-open organic pastures and have such a wonderful flavor. These eggs are as close to nature as it gets. Plus, to make the most out of National Farmers Day (which is today!), I’m using some local new potatoes that are tender and so buttery.

#breakfast #cooking #potato #eggs

Ingredients (makes 6 servings)

3 tablespoons butter, cut into 6 pieces
12 petite gold potatoes, boiled
1/3 cup sharp cheddar cheese
6 eggs
Salt
Chili oil, for serving

Heat the oven to 425°F (215°C).

Using a 6-muffin tin, grease the tin with butter. Add 2 small potatoes to each muffin cup and, using a small jar, smash the potatoes to form a cup.

Add a tablespoon of cheese to each muffin compartment. Bake for 20 to 25 minutes, until the potatoes are golden brown on top.

Carefully remove the pan from the oven. Reduce the temperature to 325°F (165°C).

Crack an egg in each potato cup. Season with salt. Bake for about 15 to 18 minutes, until the egg whites are opaque, but the egg yolk is still a bit soft.

Serve warm with chili oil on top.

A little fall treat that’s almost too easy. 🍎🍦

Apple Oatmeal Cream Pies topped with vanilla ice cream are officially my new fall obsession.

Here’s how:
• Spoon apple pie filling into the center.
• Air fry at 350°F for 4ish minutes.
• Enjoy warm straight from the air fryer, or top with a scoop of vanilla ice cream for the ultimate cozy dessert.
