I made this this gorgeous, phytonutrient rich ginger and lime sauce from the one pot one planet book ALOT over the summer. It was so good that I forgot to film us eating it but here’s the leftovers the next day! It’s a go to food as medicine recipe I use all the time. I made the original recipe with buckwheat, soba noodles broccolini, radish and pickled ginger.

Another way i like to use this sauce is mixed through butter beans for a high fibre extra on the side of a protein ( grass fed steak, organic free range chicken ect). Or use as a dressing on a summer salad 🤤

Sauce ingredients:
- one small bunch of coriander
- spring onion
- ginger
- zest and juice of one lime
- gf soy sauce
- maple syrup

Why is it important to incorporate phytonutrients into our diets?? —> phytonutrients are plant compounds that protect the body helping to neutralize oxidative stress and reduce inflammation. These natural substances support the body’s innate healing processes; strengthening immunity, enhancing detoxification pathways, help with mood disorder and overall vitality.

Buckwheat noodles and tofu are both high quality whole food sources of protein.
