After a packed weekend of sports, the girls had plenty of meal-prep requests. On our way home from Sunday’s tournament, we stopped at our local Bellevue @pccmarkets for seasonal essentials, including my favorite Japanese sweet potatoes. This week’s lineup included yogurt parfaits with homemade blackberry jam & granola, our first ginger shots, classic Italian sausage penne and, by popular demand, juicy turkey burgers. The secret? Grated portobello mushrooms and sharp cheddar, which melt into the meat for rich, savory flavor. TRUST. It’s one of our kids favorites!

We are limits w/caption length, so we’re sharing 4 recipes below. Find the full recipes, printable recipe cards, shopping list and meal-prep details on our FREE Substack, Nancy & Wayne, linked in our bio.

GINGER SHOTS | About 12 × 2 oz
4 oz ginger; 2 cups coconut water; 2-inch turmeric or ½ tsp ground; 3 peeled, seeded lemons; 3 peeled, seeded oranges/tangerines; 1–2 Tbsp honey; pinch each cayenne and pepper.
Blend everything, strain the liquid, bottle and refrigerate!

TURKEY BURGERS
2 lb ground turkey; 2 finely grated portobellos; 16 oz shredded sharp cheddar; 1 tsp each garlic powder and kosher salt; pepper; ¼ cup minced parsley.
Gently mix; form 6 patties, ¾–1 inch thick. Bake on an oiled, rimmed sheet pan at 425°F, checking at 18–20 minutes, until centers reach 165°F. Rest 3 minutes.

GARLIC-LEMON AIOLI
Mix 1 cup mayo, 7 grated garlic cloves and 2–3 Tbsp minced chives. Add juice of 1 lemon gradually; salt to taste. Refrigerate.

ITALIAN SAUSAGE PENNE | 12–16 servings
2 Tbsp olive oil; 4 lb Italian sausage, casings removed; 1 sliced onion; ¼ cup minced garlic; ½ cup white wine; 6 oz tomato paste; 8 diced tomatoes; 28 oz crushed tomatoes; 2 lb penne; 1 cup grated Parmesan; salt; roasted broccoli.
Brown sausage in oil; remove. Soften onion in remaining fat; add garlic for 1 minute. Add wine; reduce 2–3 minutes. Stir in paste for 2 minutes. Add sausage and tomatoes; simmer 30–45 minutes. Salt to taste. Toss with cooked penne, loosening with reserved pasta water. Serve with broccoli and Parmesan.
