INGREDIENTS
🍔Rice Paper Burger
• Rice paper (3 sheets)
• Eggs (2 medium, whisked, used ~1.5 in recipe)
• Lean ground beef (¾ cup cooked)
• Red onion (¼ cup)
• Spinach (1 cup)
• Light skim mozzarella (⅓ cup)
• Seasoning: onion powder, garlic powder, paprika, parsley, salt, pepper
🍠 Sweet Potato - ½ cup cooked
👩🏽🍳 RECIPE
1. Prep, wash, and chop all veggies (spinach and red onion). Set aside.
2. Whisk 2 medium eggs in a bowl.
3. Dip rice paper sheets into the egg wash and lay them on a flat surface, slightly overlapping edges so they can fold together.
4. Layer fillings: beef, veggies, cheese.
5. Roll tightly into a burger-style sphere (as shown in video).
6. Place in preheated oven at 400°F and bake for 15–20 minutes until crisp and set.
Sweet potato is prepped in advance during weekly meal prep for convenience. I just reheat it alongside the rice paper burger when making this meal
