Picking my micro crop of tea in the garden. I picked after 8am and then left the tea to wither under the sun, turning them over once before continuing the withering inside. I’m interested in having a slow withering process, taking a couple of days before the tea dries entirely. This increases the oxidation, which again affects the taste. Will I have the patience to age them, or will I try this year?
