its been a year already? ❤️‍🩹 i still haven’t fully wrapped my head around the fact that i won’t be getting any “will you be home for dinner?” texts from you. watching Michael won’t be the same without you (which i still haven’t, btw. it just feels illegal cuz you’re not here. may you never run out of whiskey and kebabs wherever you are. you’re always missed. 🕊️

If you have 5 minutes, you have time to make dinner! 🙌 We’re kicking off my new series with this cheesy chicken fajita pasta bake! 🌮🧀 Everything goes into ONE dish, there’s hardly any prep work, and the oven does the rest! 🌮 CHEESY CHICKEN FAJITA PASTA BAKE Ingredients: •12 oz uncooked penne pasta •2 cups chicken broth (adjust as needed) •1 packet fajita seasoning •12 oz frozen sliced peppers and onions •2 cups cooked shredded chicken (rotisserie works great!) •1½ cups queso blanco dip Directions: 1.Preheat your oven to 400°F. 2.Add the uncooked penne, chicken broth, fajita seasoning, frozen peppers and onions, and shredded chicken to a 9x13 baking dish. 3.Stir everything together. You may need to adjust the amount of broth depending on your baking dish. You want the noodles just covered with liquid, but not drowning! 4.Cover tightly with foil and bake for 35–40 minutes, or until the pasta is tender. 5.Remove the foil, stir, and pour the queso blanco evenly over the top. 6.Return to the oven uncovered for another 5–10 minutes, until the queso is hot and melty! One dish, five minutes of prep, and the easiest cheesy dinner for a busy fall night! 🍁 Who’s excited for more 5-minute fall dinners?! 🤎
