The best fried shrimp in the world will forever be soft shell shrimp!! These are really hard to find and always such a treat when I can source! I recently got back from Japan and was feeling super inspired to make a karaage style fried shoft shell shrimp- needless to say it was the most delicious shrimp dish I’ve ever made!

These shrimp were already deveined when I bought them so that saved me a ton of time! I marinated the shrimp in soy sauce, garlic, and ginger! Don’t judge the ginger powder I didn’t realize I had no fresh ginger at home 🤣 traditionally this would be made with potato starch, but I can’t eat potatoes so I used tapioca starch and a garlic seasoned flour.

I fried basil first then flash fried the shrimp in algae oil! My favorite part of the softshell shrimp is definitely the head and the legs! They get so crispy and have incredible flavor but everything about this was sooo delicious 🦐
