Even as a teenager, I used to read cookbooks in bed 🤓📖I just really enjoyed learning about flavor combos, tips, and tricks, and having fun creating. If we go on a trip, it’s the exact same thing—we always try to recreate our favorite finds back home. Over time, you suddenly realize you have this whole repertoire of deliciousness you know how to make! So, this right here is my second attempt at an ube matcha. It’s better than the first one (haha), but it still has a way to go! I want both the matcha and the ube parts to be thick like a foam, but dairy-free and still taste delish. I bought a completely natural ube which instantly thickens the mix, but it almost turns it into a flour consistency. I might have to try another flavor combo if this one keeps failing, because a lot of ube syrups and powders out there are crazy processed, and I definitely don’t want that paired with pure matcha goodness!
