First break at mile 175. I’m 10 hours into my ride. Feeling great. Lasagna and meatballs hit the spot. Byron brought my feet back to life. Rob & Johnny have been feeding me all day and driving the rv (the mothership). Tim & Matt are Subaru crew making sure I’m hydrated, have sunscreen and am happy. Rue is behind the camera. This crew rocks. I’m getting used to the supported life. Even better than ever.

Butter Chicken using @gymkhanafinefoods Butter Masala Sauce and Tandoori BBQ Marinade! Served with Garlic Naan

INGREDIENTS
-Chicken thighs
-Gymkhana Tandoori BBQ Marinade
-Gymkhana Butter Masala Simmer Sauce
-Full fat Greek yogurt
-Lemon,
-Heavy cream
-Unsalted butter
-Kasuri methi
-Fresh ginger
-Fresh cilantro
-Salt

For the Garlic Naan:
-All purpose flour
-Instant yeast
-Sugar
-Salt Baking powder
-Baking soda
-Full fat yogurt
-Warm water
-Unsalted butter
-Garlic
-Fresh cilantro

For the crispy onions (optional):
-White or yellow onions
-Neutral oil for frying
