Firstly, I want to thank you all.

Without you watching these little videos, commenting on posts and sharing it constantly - I wouldn’t be in this position, doing what I love, and essentially being able to write a book. I am so so grateful.

I never ask for my posts to be shared, or commented on but this one is such a special milestone that any likes/shares/comments/reposts, would be such a huge help!

I’ve put my heart and soul into this project over the past year and I really think you’ll love the photography of Ireland inside, but more so I hope that it encourages you to explore more of this stunning country we live in because there’s honestly nowhere like it! 💚

Madurai Special Egg Pepper Gravy 🍳💥🧨

Ingredients:
🥚Eggs – 3 nos
🧅 Shallots – 45g
🍅 Tomato – 30g
🧄 Garlic – 2 cloves
🌶️ Green chilli – 1
🌱 Cumin seeds – ⅓ tsp
⚫ Black pepper – 1½ tsp
🌿 Fennel seeds – pinch
🌰 Kasa kasa – ⅓ tsp
🥜 Roasted peanuts – 7–8g
🌿 Cinnamon, Clove & Cardamom – little
🍃 Bay leaf – small piece
🟡 Turmeric powder – ⅛ tsp
🌶️ Chilli powder – ⅓ tsp
🌿 Coriander powder – 1½ tsp
🌿 Mint, Coriander & Curry leaves
🛢️ Gingelly oil – 1 tbsp
🧂 Salt – to taste

👨‍🍳 Steps:
1️⃣ Heat oil in a pan and add fennel seeds, bay leaf, cinnamon, cardamom and cloves.
2️⃣ Add shallots, green chilli, garlic, pepper, cumin seeds, roasted peanuts, curry leaves, kasa kasa, tomato and mint leaves. Sauté everything well.
3️⃣ Let it cool slightly and grind everything into a smooth paste.
4️⃣ In another pan, heat oil with fennel seeds and curry leaves, then add the ground paste and cook well.
5️⃣ Add turmeric powder, coriander powder, chilli powder, pepper and salt. Mix well, add boiled eggs and cook for 2 minutes until the gravy thickens 🔥🍳
