Crispy Smashed Potato Veggie Bake 🥔🥬🧀✨ (via @doctorbowl) This smashed potato base makes such a delicious change for lunch. Topped with spinach, yellow pepper, tomatoes and a cheesy egg filling, it’s simple, satisfying and easy to make your own. Use whatever vegetables you have on hand! 💾 SAVE this recipe & SHARE it with someone who loves crispy potatoes! 🛒 Ingredients • 5 potatoes • Oil, for drizzling • Salt and black pepper, to taste • Large handful of spinach, chopped • ½ yellow bell pepper, chopped • Handful of cherry tomatoes, halved • 3 eggs • ½ cup milk • Handful of grated cheese 👩‍🍳 Directions Preheat the oven to 200°C (400°F). Boil the potatoes until soft, then drain. Place the potatoes in a prepared 9-inch baking dish. Smash and spread them out to cover the base. Drizzle with oil and season with salt and pepper. Scatter the spinach, yellow pepper and cherry tomatoes over the potatoes. Whisk the eggs with the milk, then pour evenly over the vegetables. Sprinkle with cheese and bake for 25–30 minutes, until the eggs are set and the top is golden. The BEST banana pudding, made completely from scratch! The pudding is thick, creamy, and mixed with whipped mascarpone to create an almost mousse-like texture! It’s layered with half a box of Nilla wafers and lots of banana slices for even more sweet banana flavor. This was my recipe tester’s favorite recipe from Simple Sugar 🥹 she even had a friend ask her to make it again! Simple Sugar is out Nov 10, but you can preorder it now! Comment “sugar” and I’ll send you the preorder link!
