Save a little room on your Thanksgiving plate for the carrots 🥕 @lmsthompson’s Boursin Baked Carrots pair the sweetness of carrots with rich, herby cheese for a bite you’ll keep coming back to.

INGREDIENTS:
1 pound carrots, trimmed
3 tablespoons olive oil, divided
2 garlic cloves, peeled and finely chopped
1 tablespoon chopped fresh rosemary
Kosher salt, to taste
Black pepper, to taste
1 (5.2-ounce) package Boursin cheese, any variety
1 1/2 tablespoons hot honey or regular honey

RECIPE:
1. Preheat oven to 400ºF.
2. Cut the carrots in half lengthwise, then again crosswise into roughly 3-inch pieces.
3. Drizzle the carrots in a bowl with 1 tablespoon of the olive oil. Add the chopped garlic, the chopped rosemary, kosher salt, and black pepper and toss until well combined.
4. Add the Boursin cheese and remaining 2 tablespoons olive oil to a baking dish and mash with the back of a spoon until well combined. Spread into an even layer. Arrange the carrots in a single layer overtop (you may need to turn the carrots on their sides to fit them all in). Drizzle with honey.
5. Wipe the edges of the baking dish with a damp towel to keep the edges clean.
6. Bake for 25 minutes.
7. Serve immediately or reheat before serving and enjoy.
