Greek Lemon Chicken & Rice Bake🔥402 Calories 40g Protein 9g Fat 39g Carbs

Cookbook in bio 🔗

Ingredients: this makes 6 meals

2 lbs boneless, skinless chicken breast, cut into bite-sized pieces
1 1/2 cups jasmine rice, uncooked
2 cups chicken broth, warm
1 medium red onion, diced
1 cup cherry tomatoes, halved
3 cups baby spinach
4 garlic cloves, minced
1 lemon, zested and juiced
6 oz reduced-fat feta cheese, crumbled
1 tbsp olive oil
2 tbsp chopped fresh parsley

Seasoning blend:

2 tsp dried oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp dried dill
1 tsp salt
1/2 tsp black pepper

Directions

1. Preheat your oven to 400°F.

2. Grab a 9x13 baking dish and add the uncooked jasmine rice, the chicken breast, diced red onion, halved cherry tomatoes, minced garlic, lemon zest, olive oil, and all of the seasoning blend directly to the dish.

3. Pour in 2 cups of chicken broth and the juice of half the lemon. Mix everything together well, then spread it into an even layer and make sure the rice is mostly submerged beneath the liquid.

4. Cover the dish tightly with foil and bake at 400°F for 45–50 minutes, or until the rice is tender and the chicken has reached 165°F.

5. Remove the foil and add the baby spinach and mix it in while everything is still hot so it wilts down.

6. Top with the crumbled feta cheese and finish with chopped parsley and the juice from the remaining half of the lemon. Divide into 6 servings and enjoy!

Francis Lawrence is heading back to dystopia — and this time, it's Mars 🚀

Paramount has officially landed the film adaptation of Pierce Brown's bestselling sci-fi novel Red Rising, with the Hunger Games director set to helm the project.

If you haven't read it: think a lowborn miner on Mars who gets remade to infiltrate the ruling class's brutal competition from the inside. It's been pitched as The Hunger Games meets Star Wars since the book debuted in 2014 — and now Lawrence, the director behind five of the six Hunger Games films, is bringing it to the screen.

Justin Rhodes (who worked with Lawrence on the BioShock Netflix adaptation) is writing the script. Pierce Brown himself is on board as executive producer. No filming or release dates confirmed yet.
