Honored to have attended my second class at the Pizza University & Culinary Arts Center 🍕🇮🇹
This experience was made even more special by learning from two incredible masters of the craft: Orlando Foods Corporate Chef Mimmo Tolomeo and APVN member Giancarlo Schiano.
This class was all about mastering the art of authentic Neapolitan pizza — from technique and tradition to the small details that make this style of pizza truly special. The APVN (Associazione Verace Pizza Napoletana) is an organization dedicated to preserving and promoting the true traditions of Neapolitan pizza, ensuring that the methods, ingredients, and standards passed down from Naples are respected around the world.
I also had the pleasure of dining at @lucybardc @eatsliceandpie by one of the most talented & respected pizzaolios in the game @wondergiulio … an experience I will never forget 🔥❤️
One of my favorite parts of this journey is the relationships I get to build with people in this industry. The passion, knowledge, and dedication these individuals bring to their craft is inspiring, and I’m grateful that people I once admired are now people I can call friends.
A huge thank you to the team at Pizza University & Culinary Arts Center and the Marra Brothers for making opportunities like this possible.
