Give your cornbread a little extra attention this holiday season 🍯 @lmsthompson’s Upside Down Cornbread has a fluffy center topped with golden squash and rich miso-honey caramel, bringing just the right balance of sweet and savory to your holiday spread.

CORN BREAD BATTER:
4 tablespoons unsalted butter
1 cup sour cream, room temperature
1 cup buttermilk, room temperature
1 large egg, room temperature
1 tablespoon honey
2 1/2 cups cornmeal (I use the medium-grind from Bob’s Red Mill)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 teaspoon black pepper
1 cup frozen corn, thawed
2 tablespoons chopped sage
1 tablespoon chopped rosemary

MISO-CARAMEL SQUASH:
1 medium delicata or acorn squash (about 1.5 pounds)
Kosher salt, to taste
1/4 cup granulated sugar
1/4 cup honey
2 tablespoons water
2 tablespoons miso, (gluten-free if necessary)
3 tablespoons unsalted butter, cubed
2 tablespoons heavy cream
