“And finally I would like, if I may, to dedicate this Oscar to the heroism and the courage of women, and to hope that it inspires the creation of more true screen heroines to represent them.”

In 1996, Emma Thompson became the only person in history to win Oscars for both acting and writing. At the 65th Oscars, she won Actress in a Leading Role for her performance as Margaret Schlegel in HOWARDS END. Three years later, she won Adapted Screenplay for SENSE AND SENSIBILITY.

BEEF FAJITA ROLLS 🌶️🥩🔥 (RECIPE BELOW!!)

Have you tried rolling your fajitas like this?!

Ingredients:

1½ lbs shaved beef
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 white onion, thinly sliced
1 tbsp avocado oil
Salt & black pepper, to taste

For the Salsa:
3 guajillo chiles, stems and seeds removed
2–3 chile de árbol, adjust for spice
2 garlic cloves
1 tsp chicken bouillon
1 cup hot water (for soaking and blending)

Toppings:
Fresh cilantro, chopped
Diced onion
Queso fresco, optional

Directions:

1️⃣ Soak the guajillo and chile de árbol in hot water for 10–15 minutes until softened.

2️⃣ Blend the softened chiles with garlic, chicken bouillon, and about ½ cup of the soaking water until smooth. Add more water as needed.

3️⃣ Lay out the shaved beef and add a few strips of red bell pepper, yellow bell pepper, and onion to each portion. Roll tightly and secure with toothpicks if needed.

4️⃣ Heat avocado oil in a large skillet over medium-high heat. Sear the beef rolls on all sides until browned and cooked through. Work in batches if needed.

5️⃣ Pour some of the chile salsa over the rolls and let simmer for 2–3 minutes so the flavors come together.

6️⃣ Top with fresh cilantro, diced onion, and crumbled queso fresco if desired. 🌿🧀

7️⃣ Serve with extra salsa and ENJOY! 🔥

These are perfect for an easy, high-protein dinner packed with flavor!
