“Hey Mom, what’s for dinner?” THIS! Easy, cheesy Italian chicken meatballs served over warm marinara with breadsticks and a salad on the side. Dinner in about 30 minutes! It’s marching band competition season, and between practices, competitions, and everything else, I don’t have much time to think about dinner. That’s when I turn to my tried-and-true recipes. Little planning, plenty of flavor! These hearty mozzarella-stuffed chicken meatballs are always a hit. And that cheese pull! Air Fryer Mozzarella-Stuffed Chicken Meatballs Makes 6 hearty meatballs Ingredients 1 lb ground chicken 6 Mini Babybel Mozzarella cheese rounds 3 cloves garlic, minced 2 tbsp fresh parsley, finely chopped 1 tsp Italian seasoning 3/4 tsp salt 1/4 tsp black pepper 2 tbsp gluten-free breadcrumbs (optional) 1–2 tsp olive oil 1 1/2 cups marinara sauce Shredded mozzarella or Parmesan, for topping Fresh parsley, for garnish Instructions Combine chicken, garlic, parsley, seasonings, and breadcrumbs in a bowl. Lightly oil your hands and divide the mixture into 6 portions. Flatten each, place a Babybel round in the center, and form into a meatball, sealing the cheese inside. Preheat air fryer to 375°F. Lightly coat meatballs with olive oil and air fry 15–18 minutes, turning halfway, until the centers reach 165°F. Spoon warm marinara into bowls, add meatballs, and finish with cheese and fresh parsley. 💡Kitchen tip: Ground chicken is sticky!
