Nalli Steak Biryani 📍 Hyderabad, India 🇮🇳 Video: @lunchbox2time Nalli Steak Biryani stands as a maximalist masterpiece of South Asian feast culture, uniting two heavy-meat traditions into a single, opulent plate. This modern culinary creation pairs a thick, griddle-seared mutton steak with a fragrant bed of traditional basmati biryani, crowned with slow-braised bone marrow shanks. At the heart of the dish is nalli, the prized bone marrow shank. Slow-cooked for hours, the rich marrow melts directly into the spiced, long-grain rice during the dum cooking process, imparting a velvety depth. The accompanying mutton steak—typically a thick cut of goat or lamb marinated in yogurt, ginger-garlic paste, and warm aromatic spices—is seared on a heavy iron tawa to build a deeply savory, caramelized crust while keeping the interior meltingly tender. Rooted in the royal dawat heritage of cities like Hyderabad and Mumbai, this extravagant combination represents the modern evolution of festive Indo-Muslim cuisine, designed for intense flavor and celebratory dining.
Your gut will thank you for this one. We all need more fibre in our diets, and one of my favourite ways to get it is through a warm, nourishing breakfast that actually feeds the beneficial bacteria living in our gut. What makes this porridge so good for digestion is the combination of different types of fibre. Rye flakes contain prebiotic fibres that our gut bacteria ferment to produce short-chain fatty acids like butyrate, which help nourish the cells lining our colon and support a healthy gut barrier. Chia seeds absorb liquid and form a gel-like consistency that helps support regular bowel movements, while also slowing digestion and helping maintain steadier blood sugar levels. And then there are the warming spices. Cinnamon contains polyphenols that may support a healthy gut microbiome, while cardamom has traditionally been used to support digestion. I personally don’t tolerate oats very well, even gluten-free ones, so rye flakes have become one of my favourite alternatives. Just remember that rye does contain gluten, so it isn’t suitable for everyone. Collagen is @withinusnatural !! Recipe in the caption 👇🏻

Busan International Film Festival 🇰🇷❤️ Kate and I are here with “Will You Still Be My Friend”, a film about a Singapore city family and a fishing village in southern Taiwan. We’re so happy to be part of it. The casting feels very apt for us. Kate is Taiwanese and has made Singapore home. I’m Singaporean and have spent much of my career in Taiwan. We’re both a bit of each place, and this story sits right between the two. A huge congratulations to director Lu Po-shun and the whole team, for representing Taiwan at BIFF and for the Golden Horse nomination. So proud of what you’ve built. 🎬 I’ve spent most of this past year deep in F&B work. Being here reminds me how much I love film. It’s been so good reconnecting with people from the industry, filmmakers from all over the world and especially our Taiwanese friends. Every conversation reminds us how much we care about this craft, and how much more we want to give back to the filmmaking community. It’s also giving Kate and me something we haven’t had much of lately: time together. With work keeping us in different cities, these few days mean a lot. ❤️ And yes, we’re eating very, very well. 🍜
