🍂 Crispy Gochujang Beef over Miso Butternut Squash Purée 🍯🌶️ INGREDIENTS 🎃 Miso Butternut Squash Purée * 1 medium-large butternut squash (2–2½ lbs) * 1 tbsp olive oil * 4 garlic cloves * 2 tbsp butter * 2 tbsps white miso paste * 2–3 tbsp heavy cream * Salt & pepper 🥩 Crispy Gochujang Beef * 1 lb ground beef * 2 tbsp gochujang * 2 tbsp low-sodium soy sauce * 1 tbsp rice vinegar * 1 tbsp honey * 3 garlic cloves, minced * 1 tbsp fresh grated ginger * 1 tsp sesame oil 🧅 Quick-Pickled Scallions * 1 bunch scallions * ¼ cup rice vinegar * ¼ cup warm water * 1 tsp sugar * ½ tsp salt ✨ For Topping * ⅓ cup roasted & salted pumpkin seeds (pepitas) * Reserved scallion greens * 2–3 tbsp hot honey * chili crisp INSTRUCTIONS 1️⃣ Roast the squash: Preheat oven to 425°F. Peel and cube squash, toss with olive oil, garlic cloves, salt & pepper. Roast 25–35 minutes until tender and caramelized. 2️⃣ Pickle the scallions: Separate scallion whites from greens. Thinly slice whites and combine with rice vinegar, warm water, sugar & salt. Let pickle for at least 20 minutes. Thinly slice greens for topping. 3️⃣ Make the purée: Blend roasted squash and garlic with butter, miso paste, and heavy cream until silky smooth. Add cream as needed and season to taste. 4️⃣ Crisp the beef: Heat a large skillet over medium-high heat. Add beef, pressing into an even layer. Cook undisturbed 4–5 minutes until deeply browned. Flip, cook another 2–3 minutes, then break into crumbles. Drain excess grease. 5️⃣ Add the sauce: Whisk together gochujang, soy sauce, rice vinegar, honey, garlic, ginger & sesame oil. Pour over beef and cook another 2–4 minutes until sticky, caramelized, and crispy around the edges. 6️⃣ Assemble: Spread a generous layer of squash purée onto plates, pile crispy gochujang beef on top, and finish with pickled scallion whites, fresh scallion greens, roasted salted pumpkin seeds, chili crisp, and a drizzle of hot honey! #fallrecipes #butternutsquash #dinneridea #mealideas
