Air Fryer Chicken Tikka Masala – recipe below

ad- This is my better than takeaway, air fryer chicken tikka masala, the ultimate easy autumn dinner. I make life very easy, with the @ninjakitchenuk Ninja Cripsi Duel Zone a glass air fryer with two separate cooking zones, one to cook the lush sauce and the other to char the chicken. It’s all done at the same time. Boom! X John

Serves 4

For the sauce
1 onion, roughly chopped
500g tomato passata
2 tbsp tomato puree
4 garlic cloves
1 inch ginger, peeled
2 tsp garam masala
1 tsp ground fenugreek
1 tsp chilli powder
½ tsp ground cumin
20g butter – optional
120ml double cream

For the chicken
600g boneless, skinless chicken thigh fillets
70g Greek yogurt
1 tbsp tomato puree
4 cloves garlic, crushed
½ inch ginger, grated
The juice of a lemon
1 tsp garam masala
1 tsp paprika
A handful of coriander leaves
Rice and breads, to serve
Salt

1. To make the sauce, chuck the onion, tomato passata, tomato puree, garlic, ginger, garam masala, fenugreek, chilli powder, ground cumin and a good pinch of salt into a blender and blitz until smooth. Pour into the Ninja Cripsi Duel Zone glass container. Swirl 200ml water around the blender and tip that into the glass container. Add the butter and cook for 70 minutes at 180c on roast setting.
2. While the sauce cooks, chuck the chicken into a mixing bowl and add the yogurt, tomato puree, garlic, ginger, lemon, garam masala, paprika and a good pinch of salt. Mix well. Cover and refrigerate for 30 minutes.
3. Pre-heat the Ninja Crispi Duel Zone to 240c on max crisp. Cook the chicken in two batches for 6-8 minutes a side until cooked through and charred. Slice into bite sized pieces.
4. Whilst the chicken cooks, pour the cream into the sauce and stir together. reduce the heat down to 120c and pop it back into the air fryer to keep warm. Add the chicken when its ready, stir together and serve.
