Tratando de ser una mejor colombiana 🇨🇴 Episodio 1: Carne encebollada con tomate, plátanos maduros y patacones.

It’s time! I’m officially learning how to cook all the dishes I grew up loving. And we’re starting with something super easy because, bueno, por algo se empieza.

Carne encebollada con tomate

Ingredients:

● Thinly sliced steak
● 1 tsp cumin
● 1 tsp salt
● Black pepper, to taste
● Paprika
● Worcestershire sauce
● Garlic, minced
● 1 onion, sliced
● Tomatoes, chopped
● ½ cup beef broth (I used chicken broth!)
● Oil for cooking

Instructions:

1. Season your steak with cumin, salt, pepper, paprika, garlic, and Worcestershire sauce. Let it marinate for 10 minutes.
2. Heat a little oil in a skillet and sear the steak for about 30 seconds per side. Remove and set aside.
3. In the same skillet, add your sliced onions and cook for about 10 minutes until softened.
4. Add the garlic and cook for about 30 seconds, then add your tomatoes. Let everything cook until the tomatoes soften and release their juices.
5. Pour in ½ cup of broth and let the sauce simmer for a few minutes.
6. Add the steak back into the skillet and let it finish cooking in the sauce until cooked through.

Plátanos maduros

Peel and slice ripe yellow plantains diagonally. Fry in oil over medium heat until golden and caramelized on both sides. Remove and sprinkle with a little salt if desired.

Patacones

1. Peel green plantains and cut into thick pieces.
2. Fry until lightly golden and softened.
3. Remove and flatten each piece using two board or if you want a pataconera or the bottom of a plate.
4. Fry again until golden and crispy.
5. Sprinkle with salt and serve immediately.

Served everything with arrocito blanco, cilantro y aguacate. qué delicia 🤤

Now I need my Colombians to help me out. ¿Qué plato típico colombiano debería hacer para el próximo episodio? Leave your suggestions in the comments because I have A LOT to learn.

The noodles were different, but this time her reaction was too.

Hannah ordered ramen at a new restaurant, expecting the curly noodles she’s familiar with. When it came out they were straight noodles that looked like spaghetti.

Not long ago that difference would have been enough for her not to eat it, but this time she acknowledged that it looked different, pointed out the differences, and worked through her discomfort to try it.

I can’t tell you how many times she’s ordered something familiar with every intention of eating it, only for an unexpected difference to make it feel wrong. A different noodle shape or a different color broth might seem insignificant to someone else, but for her it would mean going without the meal entirely.

This is why “I’m sure you can find something she can eat on the menu” isn’t always that simple with ARFID. Finding something familiar on the menu doesn’t mean it will arrive looking or feeling familiar to her.

It’s also why “she’ll eat when she’s hungry” is so frustrating to hear. We’ve watched her skip countless meals even when she was hungry because the food in front of her didn’t feel safe.

This time she noticed the differences, talked through what felt uncomfortable, and still gave it a try. Not every meal will look like this, but moments like these show how far she’s come and that’s what matters.

Donald Trump is tied as the favorite to win the 2027 Nobel Peace Prize, with the same odds as Sudan’s Emergency Response Rooms, a volunteer network providing aid to people affected by the war.

The 2025 prize went to Venezuelan opposition leader María Corina Machado. Trump has repeatedly argued he deserves the award for his role in resolving conflicts, while his administration has criticized the Nobel Committee for overlooking his efforts.

Traders predict a 9% chance Trump will win the Nobel Peace Prize in 2027.

comment OUTSOURCE and i’ll send you the virtual assistant agency i used, bc as a working mom of two with a full time 9-5, handing off my business admin is how i got my weekends back w my kids !!

the biggest surprise was how wrong i was about my own time - you know how in your brain you’re like “oh that only takes me 5 mins” but in reality it’s wayyyy longer? 🙋‍♀️ once janine started i could finally see how many of those lil 5 min tasks were taking up literally all my free time 😭

if you’re thinking about hiring one, here’s what made it work for me: hand off the tasks you repeat every single week first, write the instructions right on each task so she never has to come back and ask, and keep every deadline in one place (we use asana) so nothing lives only inside your brain anymore.

and honestly the best part is being fully present with my kids on a saturday without thinking about my biz literally once 🥹

if you’re new here hi, im erin!!! still in my 9-5 and not planning on leaving it, and i build the systems that let you do both. follow @kee_to_wellness
