Jummah is a weekday. Like Friday. Will we say it's a Friday? Nope.

It's jummah is correct in this context. Even if you are talking about Friday or the jummah prayer, the context is "present". In present, there is one 1 day Friday, and one prayer called jummah. If you were talking about future, then for the day you can say I love doing ghusal on a Jummah morning.
