Starting over is scary. So is staying somewhere you don’t belong just because you’ve already invested years of your life in it. People will always have opinions about your choices, especially when those choices stop making sense to them. But they’re not the ones who have to wake up inside your life every morning. You’re allowed to change your mind about what happiness looks like. Something can be exactly what you once wished for and still not be what you want anymore. That’s not failure. That’s being honest with yourself. If you’re new here, hi! I’m Julian 👽 I’m a Reiki Master and the creator behind @awakentheinner . Would you try this Mediterranean Chickpea & Chicken Salad?? This comes in at 295 calories, 21g protein per serving (makes 4). If you want easy high protein meals that taste incredible, this is such a great healthy lunch or dinner to have on hand. I usually make a big batch of a chicken salad, tuna salad, or egg salad for simple easy meals throughout the week and the flavors here were amazing. It’s also loaded with protein, and the kind of thing I could eat straight out of the bowl. Comment FLAVOR and I’ll message how you can preorder my new cookbook with 100 recipes that have helped me lose over 150 lbs! Ingredients For the chicken salad: 1 cup cooked chicken, finely chopped 1 can chickpeas, drained and rinsed 1/4 cup diced black olives 1/2 cup diced baby pickles 1/2 red onion, finely diced 1/3 cup finely chopped fresh parsley 2-3 tbsp finely chopped Thai basil 2 oz crumbled feta For the creamy lemon tahini dressing: 4 tbsp plain Greek yogurt 2 tbsp tahini 1 tbsp olive oil Zest and juice of 1 lemon 1 large garlic clove 1/4 tsp cumin 1/2 tsp honey (optional) Salt to taste 3-5 tbsp water, to thin as needed How to make it: 1.Finely chop your chicken, vegetables, and herbs. Add everything to a large bowl along with the chickpeas and crumbled feta. 2.Add all the dressing ingredients to a small blender or food processor. Blend until smooth and creamy, adding water as needed to get the consistency you like. 3.Pour over the creamy lemony tahini dressing and toss until everything is beautifully coated, then taste, adjust the seasoning with more salt or lemon, and enjoy! I love this straight from the bowl, tucked into lettuce cups, stuffed into a warm pita, or piled onto crackers. It’s also a fantastic meal prop option that tastes even better once all those flavors have had a chance to come together. If you make it, be sure to let me know on SHREDHAPPENS ENJOY! . . . #healthyrecipes #lowcarb #healthyfoodshare #mediterraneanfood
