"On the southern edge of Mexico City lies Xochimilco, a vast network of ancient canals,” says CNT Local Creator @marfilu. "Boarding a trajinera (a traditional wooden boat) at sunrise to navigate the canal's waters toward Chinampa del Sol is like stepping into a time machine. The team at @arca.tierra describes it as a way to return to the past and see Mexico City's ancient base. The chinampas—a pre-Hispanic system of man-made agricultural islands—are where Mexico City's food system was born, historically providing the valley with ancestral staples like heirloom corn, beans, squash, native chiles, and wild greens (quelites). In Mexico, corn in particular isn’t just an ingredient—it’s the sacred foundation of everything we eat. And corn dough (masa) is remarkably versatile. A round, thin disc of masa becomes a tortilla; a thick, pinched circle becomes a sope; and an oval stuffed with beans becomes a tlacoyo. The huarache, named after the traditional leather sandal it resembles, is a longer, oblong masa base, lightly crisped on the comal and topped with rajas con elotitos: strips of fire-roasted poblano peppers and corn, finished with crumbled queso fresco and crema. Today, the Xochimilco ecosystem stays alive through projects like @arca.tierra and collaborations with @thecuriousmexican, who brings emerging chefs to the islands to reinterpret the morning's harvest into dishes cooked with whatever was just picked. It's the city's true culinary history, still happening on the water." —CNT Local Creator @marfilu
