Mark McCabe and the Making of a Modern Chef
Mark McCabe didn’t take the conventional route into professional kitchens.
Growing up in rural Scotland, he was surrounded by food from an early age, but spent much of his twenties pursuing a career as a singer-songwriter before turning his attention fully to cooking. That journey would eventually take him through the kitchens of River Cottage and The Ethicurean, and today to Henrock, part of Simon Rogan’s UMBEL Hospitality.
For the latest issue of Between the Vines, Mark speaks with Founder & Editor Tom Owtram about the experiences that have shaped him as a chef.
“Making it happen is probably one of the defining mantras of kitchens. You have to get it done, no matter what. That was definitely instilled in me through music.”
